Below are some quick-hitter tips to help you understand some core principles of what we’re doing in the cafe. If you understand these things, you should be able to understand most of what's going on and serve delicious drinks.
☕ Drink Tips
- By default we are always pulling a double espresso
- Default drink size is 12oz for both hot and cold
- Ideally, you want to run a single shot of just water to clear out any potential burnt beans
- Americano is just going to be double shot and add hot water
- Matcha gets 5 scoops
- Matcha gets 3 pumps of simple syrup
- A Matcha with cold foam gets besa matcha sprinkled on top
- A Spanish Latte with cold foam gets besa Cinnamon sprinkled on top
- Condensed milk should be put at the bottom of the espresso cup
- Mix in the espresso with condensed milk prior to pouring in cup
- Chocolate should be put on bottom of the the expresso cup
⚖️ Measurement
- Espresso grounds = 16-18 grams
- Condensed Milk = 16 grams
- Matcha = 5 scoops
- Syrups = 3 pumps
📘 Labels & Food
- When you’re taking anything out of packaging, it needs to be labeled.
- Examples:
- Egg bites
- Cold brew
- Pastries
⏱️ Lifespan of Items
Because we don’t want to waste any food, be sure when prepping, you’re only prepping a limited amount. We can always add more later. After it’s prepared, the clock starts ticking.
- Egg bites = 4 days
- Cold brew = 1 week
- Fruit cups = 3 days
- Pastries = 3 days
🔥 Heating Up
- Pastries = 30 sec
- Egg bites = 1:30 min
- Quiche = 1:00 min
